Our coffee selection changes every couple of months. Just as the seasons do, ingredients change. Harvests shift. Certain lots run out. Something new and exciting appears. Every detail is considered, every choice deliberated — where taste, craft, and intention meet.
Our process always starts with tasting. Once a coffee catches our attention, we spend time with it. We brew it different ways — V60, espresso, french press, and others — to see how best to express the coffee. We pay attention to the details: how the sweetness opens up, how the acidity balances, how the finish lingers. We’re not trying to force a profile; we’re listening for the one that’s already there. When it’s ready, we share it with you knowing it’s something worth the wait.
Every selection we work closely with roasters to understand the origins and the producers intentions. We make considerations for every cup: clarity, natural sweetness, brightness, process, and a sense of the region you can actually taste. It’s not just about what’s good — it’s about creating a feeling.
Our rotations isn’t about chasing trends or filling shelves. It’s about discovery. About finding coffees that make you pause mid‑sip. About connecting you to the people and places behind each cup.
